Cosmopolis Coffee, a small Portland roaster, is opening a cafe on NE Broadway on the south edge of the Irvington neighborhood. They’ll be taking over the old Saint Simon space; Saint Simon left there this past June. I spent a little time chatting with Conor Carrigan, Cosmpolis’ owner, to learn more about what’s to come for them.
