Proof Pizza, a Beaverton pizza cart, is opening a brick & mortar in Portland. They’ll be keeping the truck in Beaverton and expanding eastward to SE Portland, bringing their popular Chicago-style thin crust tavern pies with them. Look for them to be open initially the first week of September—a late night service window and pickup/delivery. Then in October they’ll have the full bar and restaurant up and running. The location? The old Pepper Box Cafe, which closed in 2023. 932 SE Morrison Street, Portland

Small Bites: Pinolo Gelato, Nam Tao Huu, No Sabo, and More

Pinolo Gelato celebrates 10 years. These guys make some of the best gelato in Portland. It was started by Sandro Paolini, who is originally from Pisa in Italy. He moved to the PNW a while back, but his path eventually led him back to Pisa to learn how to make gelato from his friends and mentors there, Ilaria and Omar of @ioegelato.

Cascadia Taphouse To Open in Timberview’s Array Food Hall in East Portland

The other day a reader emailed me about Cascadia Taphouse opening a location in East Portland. This west-side-based taphouse will be setting up shop in the Array Food Hall, located on the ground floor of Timberview VIII, a major mass timber project that was recently completed. I reached out to Cascadia Taphouse and spoke with the owner, Rich DeCoste, to learn more.
