
Cupcakes from Cake’N it Better.
Back in May, I was walking toward the Roseway Safeway entrance when I encountered a table outside filled with boxes containing what I suspected were baked goods. I could not resist my curiosity and when I saw the cupcakes I then could not resist getting a sampler box of four. They sure looked good but honestly, I did not know what to expect. Turns out they were delicious! And made by a small cadre of bakers under the name Cake’N it Better.
I’ve been following Cake’N it Better on social media and learned today they were featured in the print edition of the Portland Observer (“the oldest continuous African-American owned publication in the State of Oregon”). The article talked about their presence at the Eastport Food Carts pod (SE 82nd and Center). The article mentions, aside from the cupcakes, that they offer, “cakes, chocolate-dipped rice crispy treats, pretzels, and specialty flavored sugar coated marshmallows.”
The box of cupcakes we got contained—I think (it’s been a while)—red velvet, banana, birthday cake, and carrot. I liked them all but loved the red velvet in particular. The cupcakes are moist, flavorful, and for my tastes have a nice balance between cake and icing. The icing is also very good—not grainy, smooth, with a delightful texture. Next time I catch them I want to try their pineapple crunch cupcake (their consistently best selling cupcake).
The folks behind Cake’N it Better are Erika and Anthony Warren with additional family members BeeJay and Bubba joining the business. It sounds like they started out as a home bakery enterprise, and have expanded commercially along with offering catering services and special orders. Now that’s an American success story.
So head on over to the Eastport Food Carts—you can find Cake’N it Better there Tuesdays through Thursdays from noon to 5pm. You might also find them are different vendor events—and maybe in front of your local Safeway.
