Extraordinary Hand Pie and Cake at Bee’s Cakes Pop-up

Some of the tasty treats at Bee’s Cakes during their pop-up retail event.

Today was the day—the day of the bakery pop-up at Bee’s Cakes! My friend Charlene and I headed over there this morning and found an abundance of irresistible choices. So many delicious options, from full-on cake slices to cookies to savory pastries. And speaking of savory pastries, the roasted red pepper, corn & goat cheese hand pie was stellar.

The pastry was wonderfully flaky and the interior was like a burst of summer. I loved how sweet the peppers were, and they paired very well with the corn and savory goat cheese. It was my favorite thing among all the pastries I had in my possession. I wish I had bought six of them.

On the sweet side, there were many delicious things. In particular was this slice of chocolate espresso & hazelnut blackout cake.

It’s very easy to find dry cake in this world, but this one was moist with a very satisfying texture. Charlene and I wondered about the frosting—was it some kind of buttercream? Or was it whipped cream? It was so light and smooth—and not overly sweet. The whole slice felt special with its vast and pleasurable toasted hazelnut coverage. This is a winner.

And on the topic of cake, the strawberry coconut cake was also very good, with a similarly excellent texture and overall tastiness. The tart strawberry filling was so good and a great contrast to the sweeter cake on either side of it. One thing is certain: Rebecca’s cake skills go to 11.

They (I think it was her brother) made me a great iced latte, too.

When we first got to Bee’s Cakes there was a line, and Rebecca said there was a sizable line right at 10am when they opened. When I drove by around 1:30pm there were still people stopping by and getting their pastries and coffee. I think the neighborhood is really craving what Rebecca has to offer, and when she opens the cafe full-time, it will be something to celebrate. UPDATE: The next pop-up will be Saturday, October 2, 2021!
