
I recently came across a new business opening in the Richmond neighborhood called “Caseus Diem.” I love the intriguing name, and it turns out it’s all about cheese. I reached out to the owner, Han Schmidt, to learn more, and here is what they shared.
Update: The Caseus Diem Grand Opening
On August 19, they posted the details of the grand opening on social media, which is Saturday, August 24. Stop in any time between 11am and 7pm. There will be cheese samples, and you’ll be able to purchase cheese to take home—at a 10% discount. It also looks like building your own cheese board is another option that day.
What’s the Deal With “Caseus Diem”?
About the name: “Caseus Diem” translates to “Cheese The Day,” in Latin. Think “carpe diem”—seize the day, but about cheese. Their basic concept: “I’m looking to create a fun, colorful, and modern take on a cheese shop,” says Han.
Caseus Diem as a business originally started out in 2021 (middle of the most active years of the pandemic), where Han led online cheese classes and created cheese plates for sale.
At Caseus Diem the brick & mortar, you’ll get the chance to sample over 75 cheeses from around the world. “There will be a regular rotation of up to 12 cheeses,” explains Han, “that will be available for a build-your-own cheese board menu.” Along with the cheese, you can add accoutrements that work for any cheese pairing—jams, honeys, crackers, breads, meats, etc.

Their website offers some of Han’s background with cheese, which started in Southern California. “Nearly 10 years ago I started my journey into the world of cheese in a little shop in Carmel-by-the-sea, CA,” begins Han. “I didn’t have any food experience before starting there and working there sparked a life long passion.”
Han continues, “Hands down the best part for me is seeing people’s faces light up when they try their new favorite cheese. I found that after working in grocery store cheese departments, while I met some awesome people who taught me a lot, I missed the engagement you can only find in a specialty shop. Which led me to create Caseus Diem.”
“I wanted a cheesy space where all are welcome and I’m fortunate enough to make this a reality. I’m so excited to share it with the people of Portland.”
