Rotigo in Slabtown Slated to Open December 18

Back in early October, I wrote about Rotigo, a new “fast-healthy” (they also identify as “fine casual”) counter-service eatery opening up in NW Portland. Originally the place was to open in the fall but according to Portland Monthly, Saturday, December 18 is going to be opening day and more recent reports highlight the rotisserie chicken aspect of the place.

Cate Hughes, the force behind Rotigo, mentioned on her Instagram that you can expect “veggies, salads, and sandos with rôtisserie chicken, Euro-centric wine bar, and gourmet snax.” Love the idea of gourmet snacks—and I do love rotisserie chicken. Cate did an interview with Eater last month, and here are the details on the chicken from that:

“The Rotigo chickens sit at the heart of both the space and the menu: A 24-bird rotisserie is in full view from the main space, spinning birds that customers can order whole, in sandwiches, in salads, and as soup. The chickens start with a 36-hour brine, with things like herbes de provence and lemons, before they’re air-dried in the walk-in to ensure a crispy skin. They hit the rotisserie, and then land on plates and in takeout containers as whole or half birds. Some of the chicken will be pulled for things like the Roti Niçoise, a take on the classic salad that swaps the fish for chicken, or the Tuscan Picnic, a sandwich with oven-roasted tomatoes, chicken, and salsa verde.”

And while they will focus a lot on wine, I was happy to see they’ll have some non-alcoholic beverages like kombucha—on tap! Plus coffee service, too. You’ll also find it easy to access their retail (the mercantile and perhaps the wine shop) area, so you can pop in, browse, and buy. If you’re just there to pick up, you can do that just past the entrance.
