Boozy Brunch Spot Flattop & Salamander Opening in the Buckman Neighborhood

Back in 2018, we learned about Flattop & Salamander, a brunch spot that was to open in the Lents neighborhood that September. Fast forward to 2022 and you should see them open in the Buckman neighborhood with a cocktail-heavy menu and brunch stalwarts like french toast and biscuits & gravy.

It will be run by Samantha Castle (drinks) and Todd Brown (food), both of whom spent time at Bar Mingo and Laurelwood Public House & Brewery, where they originally met. The space, located at 1401 SE Morrison Street, makes Nostrana one of their neighbors. It will hold 60 seats—32 inside, 16 outside, and 12 at the bar. They’ll be open 7 days a week, from 7:30am to 3pm each day.

In their Poached job listing they say they, “are looking for fun, dedicated people who love the hospitality business just as much as we do. Having a good time at work is a requirement!” That bodes well for a positive working environment.

Aside from french toast and biscuits & gravy, it looks like fried chicken sliders, jojos (with housemate ranch) and a Reuben are on the menu, which is still in development as of this writing. They indicate their drink menu will be “ambitious.” I’m hopeful they will have some interesting dry drinks for those of us that do not consume alcohol.

The name of the restaurant, “Flattop & Salamader” references two useful tools in a commercial kitchen; in simple terms, a flattop is a grill and a salamander is a broiler.

Samantha and Todd hope to have Flattop & Salamander open in January 2022. We wish them luck as they move closer to their opening.
