
A new coffee shop has arrived in Portland’s Parkrose neighborhood, named Chik & Chuck’s Coffee. They are located inside the Fork & Spoon, a Filipino restaurant in the neighborhood, and is run by the same people. The coffee shop had its grand opening earlier this month.
As I mentioned, Chik & Chuck’s is located inside the Fork & Spoon. “Half of the restaurant we turned it into coffee shop,” explains one of the owners, Erwina Barney. She opened Fork & Spoon originally in 2018 after she spent 2012 to 2016 operating a mobile kitchen in the Beaverton era (prior to that she attended the Oregon Culinary Institute). It wasn’t until I read her story on the restaurant’s website that I understood why she called Fork & Spoon just that: “As Erwina was discerning a restaurant name, her intent was to merge both her Filipino and American cultures, from there Fork and Spoon was born, as she said both cultures use the fork and spoon; but in different ways.”
The new coffee shop is the next step in her establishing herself in the Portland food scene. Along with the familiar lattes, chai, and drip coffee, Chik & Chuck’s offers a number of signature espresso drinks (each starts with 2 shots of espresso):
- Bonfire Latte: roasted marshmallow, chocolate
- Peanut Butter Cup-o-Joe: peanut butter, chocolate
- Lola’s Latte: cinnamon, brown sugar, chocolate
- Filipino Dessert: coconut, ube
- Kape Tsokolate: chocolate, vanilla

They also offer flavored Red Bull. And for things to eat, some of the items they’ve offered include:
- Vanilla chiffon cupcake
- Cinnamon rolls
- Banana fruit bread
- Cheesy brioche
- Ube cupcakes with toasted coconut flakes and cream cheese glaze
- Bread puddings—pumpkin spice, ube, butterscotch, and chocolate
- Chocolate chip cookies
They got a lot of help along the way:
- James Helms, owner of the Rocky Butte Espresso Bar, helped train their baristas. You’ll also find Rocky Butte Coffee Roasters beans there, sourced directly from Coffeerama farms outside of Cabañas, Honduras.
- Historic Parkrose also supported them.
- Karin Hoffman created their logo.
So stop on by and check out their drinks and pastries. There isn’t much in the way of cafes/coffee shops east of 82nd Ave, so the presence of Chik & Chuck’s is important. I wish the Barney family only the best in this new arm of the business!
