Nashville hot chicken, that spicy Southern export enjoyed by many, continues to be a presence in the Portland food scene, and soon you’ll be able to get it at a couple of new spots. International fast food chain Dave’s Hot Chicken and local fried chicken joint Baes Chicken are both set to open in NE Portland.

Four Things I Learned This Week (September 23)

Portland Fermentation Fest will not happen in 2022. The organizers behind Portland’s own “Stinkfest” announced they are now holder the Fermentation Festival this year: “The three of us (volunteer organizers Wanpaku Natto, Liz Crain and Urban Cheesecraft Kits) will re-evaluate for 2023. Time will tell. Thank you so much for your support over the years and patience in the last couple of years. We miss our sweet stinkfest and we miss you!”

It’s a great festival (see my writeup from 2019) and I do hope they will return in 2023.

Red Sauce Pizza will open their dining room. It’s coming, and for that I’m glad: the Red Sauce dining room is opening … soon. I’ll be there. 4641 NE Fremont Street, Portland

Future Days will pop up in the old Handsome Pizza space. Kiki and Casey, former employees at Handsome Pizza/Seastar Bakery, are popping up in their old digs this weekend as Future Days. They’ll be making pizza that was a hot ticket item during their time in SLC. Head there Sunday September 25, 5-9pm. Kalesa Coffee opens tomorrow morning. Head to the new brick & mortal space of former popup Kalesa Coffee tomorrow morning from 9am to 1pm for their grand opening party. There will be coffee, of course (their own roast), with Filipino flavors (ube, for one), plus breakfast sandwiches, toast, and sides from Balong. Definitely check them out! 7024 N Richards Street, Portland

Bonus: NYC’s Cevallos brothers custom made a sign for Laughing Planet in PDX. You can read about these brothers originally from Ecuador who work with many Queens businesses (in Jackson Heights, among other neighborhoods) to make hand-crafted signs as promotional tools. I have to admit I am delighted to see when Queens and Portland intersect. You can check out the sign here.

Nico’s Cantina Opens September 24

Although I’ve been under a pile of editing work these past couple of weeks (I love my job as an editor) that has kept much of my attention from the blog, it hasn’t squelched my anticipation and excitement about the opening of Nico’s Cantina. I’ve been eager to know of their opening day and Nico finally released that detail: Saturday, September 24 at 3pm.

Janken, a Japanese/Korean Fusion Restaurant, Will Open in the Pearl

The game of Janken, the namesake of the new restaurant.

A new self-identified “hot spot” will open in the old Bluehour space on NW 13th Avenue in the Pearl. Called, Janken, it offers “Japanese/Korean fusion cuisine.” Additionally, “Janken [has] a strong cocktail program influenced by Korean & Japanese flavours.” Rodrigo Ochoa is the executive chef (formerly of Groot Hospitality in Miami).

Top 5 Posts on Bridgetown Bites, August 2022

I enjoy seeing what Bridgetown Bites readers gravitate toward and August 2022 was no exception to that. It was a bit of a mix this time around: the sad news of Yohhei Sato’s untimely death; restaurant news; and event info. I did attend the Middle Eastern Festival and it was lovely as always—highlights were the chicken skewers and the ma’amoul that melted in your mouth. And remember: O’Dear opens their doors this week! The grand opening is Thursday at noon.

5. Yohhei Sato, Gone Too Soon

Earlier this week I was shocked to learn of the sudden death of beloved Portland mobile knife sharpener Yohhei Sato. He sharpened knives under the name Sato Sharpening, and was beloved among so many Portlanders—chefs, food industry pros, and regular people alike. I wanted to take this space to recognize him, honor him, and express my sympathy to those who loved him.
