Carina’s Bakery Brings Standout Flavor to Beaverton’s Vegan Scene

As January comes to a close, there’s still opportunity to try Portland’s vibrant vegan food scene in celebration of Veganuary. Carina’s is located in Lascala Food Hall in Downtown Beaverton, alongside its food neighbors such as Batter Up, Karver Sandwich Bar, and Maiale Rosa Wood Fired Pizzeria. The bakery is situated on SW Lombard Avenue with a side street entrance, making easy to spot with its eye catching blue and yellow signage.

We love Carina’s inspiring origin story! Founded by Carina Comer—a food entrepreneur with Swedish and Irish roots—the bakery is a tribute to her Scandinavian heritage. That influence is reflected throughout the space, from its quaint décor and Scandinavian folk art to its Swedish flags. Carina’s journey is also a powerful reminder of what’s possible when you pursue your dreams, even in the face of life’s challenges.

Empathy and inclusion are central to how Carina runs her business. The bakery is intentionally designed for people with disabilities, featuring thoughtful touches such as audio talk-back at the register and a service-animal-in-residence program. During our visit, we met Moby, a sweet yellow lab who is Carina’s service dog. Unsurprisingly, my kids’ focus quickly shifted from the treats counter to Moby as soon as they spotted him.

What We Tried at Carina’s Bakery

Scandinavian Almond Cake ($5.75 each)

My ten-year-old insisted we try this cake and they were absolutely right! It’s a true showstopper. The cake’s texture is substantial and it boasts a pronounced almond flavor, (naturally). And for a vegan treat, the almond cake was super moist and decadent. I’d happily order it again alongside a cup of coffee or tea.

Cardamom Buns ($4.50 each)

It’s easy to see why this item is a top seller and Carina’s personal favorite. The crust is golden and crunchy, layered with rich cinnamon and decadent pearl sugar that adds just the right balance of sweetness and texture. Inside, the bun is airy and not overly sweet, making it a perfect companion to a warm beverage of your choice.

Molasses Crackle Cookie (GF, $1.75/each)

This is a classic molasses crackle cookie, which my kid described as “crunchy on the outside and chewy on the inside. It’s just plain yummy!” I can see why this is one of Carina’s popular cookie flavors, especially in the winter when you need some warmth and comfort.

Moby’s Kisses Cookie (GF, $1.75/each)

Another sweet win, my kid described this cookie as “soft on the inside and out,” noting that the chocolate center wasn’t overly sweet, making it just right for her. As with the other baked goods, the texture stood out: tender and satisfying, without the dryness or crumbliness that can occur with vegan treats.

A Carina’s Bakery Speciality: Lefse Wrap ($8 each)

The only savory item I tried, this wrap caught my personal interest. The wrap itself is made with wheat flour, so it’s not gluten-free, but it’s light with a pleasantly fermented flavor. The filling was absolutely delicious, featuring vegan Swedish meatballs with excellent texture and flavor, along with lingonberry chutney, pickles, and spinach. While the wrap isn’t huge, it’s surprisingly filling and it doesn’t leave you feeling heavy. A perfect lunch option!

And there you have it, Carina’s Bakery, Beaverton’s home to 100% vegan treats, is well worth a visit. Impressed by both the variety of their offerings and the warm, welcoming vibe, it’s clear that this is no ordinary bakery. I hope you pay them a visit soon!
