Sushi Dash Will Open in Portland’s Woodstock Neighborhood

While I was hanging out in Woodstock last weekend to watch the World Cup England-Norway semifinal match at The Heist, I walked around the neighborhood and came across a new restaurant going in: Sushi Dash. It’s in the old Subway sandwich shop by the Safeway. Here’s what we know.

The Subway Space

Back in May 2026 I had learned that Cloud City was planning to expand into this space, which is next door to them. Obviously that did not come to be. A local business owner had posted online, “It’s a bigger better space. We are happy for them and all the businesses in the Woodstock area.” 

That Subway closed on June 27, 2025, as Subway chose not to renew their lease there. This was probably part of a national downsizing. It is unclear when this Subway opened but it was at least as far back as 2007. Andy over at Andy’s Retail Exploration says, “I believe this sandwich shop opened sometime in the 1990s or early 2000s.”

Sushi Dash

There is hardly anything online about Sushi Dash in Portland. In online searches, a Sushi Dash from Mechanicsburg, PA always shows up, and there’s one by this same name in Mexico. There is no website or social media that I have been able to find for this Portland Sushi Dash, at the writing of this article. As an aside, I wonder if this will confuse search engines if they decided to get on Door Dash.

There is, however, an ORSOS record for Sushi Dash: Sushi Dash LLC. Someone named Carmen Chin AKA Carmen Lian Chen is behind the company; another person named Baolan Chen was involved but subsequent paperwork indicates that they are no longer involved.

Registration and adjustments were made back in October 2025.

There is a person by the same name—Carmen Lian Chin—who is associated with a number of businesses, including the Pure Spice location that opened in Hillsboro in 2014 and closed in 2015. I also appears that she was an owner/manager of the Pure Spice on SE 87th Avenue. I’ve reached out to her to confirm this association.

A Peek Inside

I did not take any photos, but I can tell you that it looks pretty clean and orderly in there. I was able to see three long tables with maybe 8 to 10 seats at each. I did not see any two tops or four tops, just the communal tables.

With this in mind, my guess is that it will skew more casual than elevated.

I’ve reached out to Carmen to learn more and will pass that on when the time is right. No idea as to when they might open, but it looks good in there; I’d say perhaps this summer sometime.
